This Cucumber Honeydew Salad is a refreshing combination of crisp cucumber, sweet honeydew, and juicy blackberries, all tossed in a light honey dressing. Ideal for hot summer days!

Ingredients

  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 4 cups (550g) cubed honeydew melon
  • cups (205g) peeled cucumber batons
  • 1 (6oz) (1706) package blackberries
  • cup (50g) feta cheese
  • ¼ cup (6g) chopped fresh basil

Instructions

  • In a small bowl, combine the lemon juice, olive oil, and honey. Set aside.
  • In a large bowl, combine the honeydew, cucumber, blackberries, feta cheese, and blackberries. Lightly toss with the dressing and serve.
